There are many benefits of eating celery because celery is the poignant plant of the parsley family, as a cooking ingredient. In Urdu language, it is called ajwain. It is a herb. Celery has been cultivated as vegetables and marshland plants. It is raised seed in an open garden. Celery was first grown in the winter and spring seasons.  It is a cleansing tonic of the winter diet. In England, it is cultivated from September to April. In North America, cultivar dominated celery as Pascal celery. Its color is white and red. In Europe, celeriac is used instead of celery. Celeriac is celery roots. It is the main ingredient in salad. In Asia, celery is cultivated in marshland. Leaf celery has a strong taste and smell. It is a flavoring ingredient in pickled and soup.

Structure of Celery

Celery leaves are 3-6 cm long and 2-4 cm broad and their diameter is 2-3 mm. It is color like creamy white and broad long and wide. Wild celery is 1m tall and found in the foothill zone. It grows in moist and wet soil.

Wild Celery

Wild celery is wedge-shaped leaves consist of a bawdy taste and unpleasant smell. Eating wild celery is rare.

Celeriac

Celery root is called celeriac, and it is the main ingredient in soup.

Leaf celery

It is grown in marshlands and has thin stalks and a musty smell. It is used in pickled and flavoring of soup.

Celery has two different kinds of leaves dark and pale leaves. Dark leaves have grown on stalks and pale leaves in the Centre. Dark leaves are thick like flat-leaf, have a bitter taste, and pale have delightful taste and texture. We usually used these kinds in daily cooking.

Way of Using Celery;

Some Tips for Storing Celery;

If you want crispy leaves then dry leaves from pale to bright green.

You should store chopped celery only for few hours.

You can also store celery in dried form.

Store celery with leaves and stalk in the fridge. It will freeze well. Chopped raw celery, then freeze it on a baking sheet, and then put it in plastic bags. You should keep it easy for few months.

Firstly, wash celery and dry it. Separate stalks and leaves from into. Put all stalk on the cutting board and cut it in a box shape.

Sliced celery:

Secondly, Wash celery and dry it and separate both stalks and leaves out. Put it inboard and cut it from the top to bottom of the stalk in too two pieces.

Cream for Soup:

Things that require for this recipe;

  • ½ Butter
  • 1 Chopped onion
  • 2 cup celery
  • Garlic and ginger paste
  • 1/3 cup floor
  • 1 tsp sugar and half tsp salt
  • 1/8 black pepper

First, melt butter under medium flame.  Cook chopped onion, put ginger garlic paste in it. Add celery and cook all these for 5 to 7 minutes. Put the flour and cook for a while. After that add chicken stock and milk, stir for few minutes until it gets smooth. Reduce flame from increase to medium and adding other remaining ingredients then uncovered it for 20 minutes.  Add salt according to your taste.

Celery Salad:

Requirement:

1 celery root, 10 celery stalks, and some celery leaves. ½ olive oil and 3 tsp lemon juice, salt, and black pepper.

Peel off the celery roots. Add celery roots with celery stalk, lemon zest. Add some salt and pepper. Rest for 5 minutes. Meanwhile, add lemon juice and oil.

Celery Juice:

For juice one celery root is required. Blend celery with apple and add lemon for flavor. After blending add one glass of water with the mixture. Add ice to it.
